Hot wraps

This recipe comes via my daughter.  It is unfailing in its deliciousness and will certainly become a regular part of my lunchtime menu list – even her children ask for them.

In a bowl mix up the following ingredients (she puts all the ingredients in separate bowls in a rather cheffy way).   Grated hard cheese such as gruyere, cheddar, emmental, parmesan, add finely chopped spring onion, coriander and Jalapeños peppers from a jar or chopped fresh chilli flesh.  These ingredients can obviously be varied to taste – you may prefer chopped tomatoes.

Spread this mixture onto one half of a wrap, top with a slice of parma ham and fold the wrap over.    Brush the wrap with olive oil and place oil down on a pre-heated griddle/frying pan.   After a good minute brush the top side with oil and turn the wrap over for a further minute.   Slide onto a plate and start on the second batch – nobody ever has one.
